We’re getting ready for fall in the best way we know how: by collecting inspiration for all of our upcoming bakingprojects. Fall is the start of the unofficial baking season—the weather cools down, activities turn indoors, and winter holidays appear on the horizon. It doesn’t hurt that the season is also associated with flavors that are particularly well-suited for baking, whether you lean towards apple, cinnamon, or pumpkin spice. We’ve gathered some of our favorite highly rated and fall-ready baking recipes and divided them into four categories: cakes and quickbreads, crisps, pies, and cookies. Without further ado, here are 52 baking projects we’re excited to tackle this fall.

Pies, Tarts &Galettes
There’s no reason to wait until Thanksgiving to make your first pies and tarts of the season, especially if you keep things straightforward with a freeform galette or a press-in tart shell. Flaky, buttery pastry pairs especially well with peak season apples that are sweet, tart, and crisp enough to hold their shape when baked.

Whether you're in the mood for some soup-simmering, leaf-peeping, or nothing at all, your dream weekend awaits...
Toasted Coconut – Bring out the nutty, fall flavor of coconut by toasting it. Use it for a deep coconut flavor in scones and cookies, or a sweet and crunchy topping on cakes and cupcakes like these Coconut Cream Cupcakes.
Apple and cinnamon are the best fall flavor combo for sweet treats like apple crisp and applesauce, but cinnamon can also stand on its own. Use cinnamon to spice up your holiday teas, pancakes, or quick breads, or stick with everyone's favorite cinnamon treat: cinnamon rolls.
Coconut is also trending in fall and holiday launches, layered with cold weather staples such as pumpkin, maple, and woods, creating year round demand.
Harvesting of coconuts occurs throughout the year. The time from fruit set to full maturity is about 12 months. The fruit should be harvested fully ripe for copra and dehydrated coconut. Drinking nuts should be picked earlier, at about seven months.
Autumn brings about the warmth of savory vegetable soup, the richness of caramel, and the sweet-tang of apples. It's also a time for the crunch of pecans. Perhaps the very best autumn flavor is the sweet and spicy goodness of pumpkin bread! All of these flavors bring about warm memories, as well.
However, summer isn't the only time to treat yourself to the tropics. When spring rolls around, coconut's fresher notes pair perfectly with fruity, floral and citrus scents. And it's not just for warm weather, either. It may sound weird to think about coconuts in the middle of winter but trust us: it's amazing.
