Coconut, Vanilla & Almond Butter Smoothie is a velvety smoothie made with coconut milk, vanilla, almond butter and sweetened with dates!

I need a weekend from this past weekend.

Chaos. Pure Chaos. But all good chaos. Does that even exist?

If you follow my Instagram, you probably saw me bragging about some cute new babes that came into my life. I am the proud auntie to THREE new babes.

Three. All in one day may I add.

Both of my sister in laws had their babes on Friday. My brother’s wife was scheduled to be induced on Thursday but was postponed to Friday. And then the twins from future sister in law just thought it would be fun to make an early entrance into the world, instead of this upcoming Tuesday! They are so clever.

See, good chaos!

Luckily, they were both at the same hospital so that was less of a headache but one minor detail. The babes were about 10 hours apart. My niece Nora said hello to the world at 1:11pm and the twins, Beckett and Lyla, said hello at 11:35pm & 11:36pm.

So what do you think a young, not quite married couple would be doing on a Friday night? Asleep? Well, that is typically the answer, but this Friday night we decided to venture out of the town. Rare siting these days! After dinner and a few co*cktails later, we got a call from our brother in law that my fiancé’s sister was in labor. Oh goodness. A few things flew through my head…like maybe we shouldn’t have had those shots? Kidding! Sorta.

And we need to go!

So up to the hospital we went! We were so excited for many reasons. How crazy is that all three babes decided to enter the world on the same day?! 4.4.2014. Definitely never forget that birthday! And we will forever be bouncing back and forth between birthday parties.

All good chaos is ahead for us. With so much chaos this weekend, a simple, non-complicated breakfast was a necessity. As the weather temperature increases, so does my cravings for smoothies. For some odd reason that I cannot explain, smoothies during the colder months do not appeal to me. Crazy because I drink iced coffee and down ice cream like its going out of style all year long. I told you I’m a lil weird….

Coconut milk and almond buttercreate a velvety texture, with fresh vanilla specks throughout in this almond butter smoothie, no bananas here! To balance out last’s weeks Mexican fiesta, I sweetened the smoothie with dates; which I love for their caramel undertones. Dates are a staple in our house from making our favorite appetizer to eating straight with a spoonful of almond butter for a quick pre-workout pick me up. So tasty.

While this almond butter smoothie is a velvety, addicting and healthy smoothie to start your day, I savor it just as much for a night cap to a chaotic weekend.

So please excuse me will I go hit the snooze just a few more hundred times.

meal prep tips:

  1. to save yourself time in the morning, combine all the ingredients in a sealed container, store in the fridge, then add to a high powered blender at time of consumption.

  2. this smoothie tastes great as a frozen treat as well! Just blend, place in a bowl and freeze. let sit for 10 minutes to thaw slightly then enjoy like ice cream!

Ingredients

Instructions

  1. Add all ingredients except ice to blender. Puree well.
  2. Add ice and blend until ice is all crushed and smoothie is well blended and smooth.
  3. Pour into two glasses and serve immediately.

Notes

*Add more or less ice to make the smoothie thinner or thicker consistency.
*Vanilla protein powder would be great to add for a post workout smoothie!
*Add the stevia if the dates or not sweet enough and for more intense vanilla flavor.
*Use canned coconut milk for a thicker shake like in the photos. Shake can to mix cream and water. Use carton milk for a thinner shake.
