What’s more comforting and satisfying than meatloaf? How about meatloaf wrapped in bacon, seasoned perfectly, and doused with a rich, creamy gravy? Yep. I think that’ll do. That’ll do just fine.

Instructions

Instructions are for 4 servings. Please modify as needed.

Meatloaf

  1. Preheat the oven to 400°F (200°C).

  2. Over medium heat, melt the butter in a frying pan. Add the onion and fry until soft, but not browned, and then set aside to cool.

  3. Mix the ground meat in a bowl. Add in the fried onion and all the other ingredients, except the bacon. Mix well, but avoid overworking it because this can make the end result too dense.

  4. Form into a loaf and place into a greased baking dish. Wrap the loaf in bacon.

  5. Bake in the middle of the oven for about 45 minutes. If the bacon begins to overcook before the meat is done, cover with aluminum foil and lower the heat a bit. If the bacon doesn’t appear to be completely done, broil the meatloaf for approximately 5 minutes.

Gravy and serving

  1. Save the juices that have accumulated in the baking dish, and use to make the gravy. Mix the juices and the cream in a smaller sauce pan.

  2. Bring to a boil and lower the heat and let simmer for 10–15 minutes until it has the right consistency. If you want, use a little tamari soy sauce to taste.

  3. Serve with freshly boiled broccoli or cauliflower with butter, salt and pepper or any other side dish of your choice.

Scott, I made this exactly to the recipe for 2 people and not 4, so half of the recipe too. It was absolutely delicious. 400F is very hot - 200C for us. I cooked it on 180C as 200C with a fan oven is very hot. Everybody's oven is different too. I also have an oven thermometer to make sure it is at the right temperature before I put anything into a fan oven. My bacon and everything came out perfect. I used streaky bacon as is normal in Britain, not thick back bacon.

I personally wouldn't use almond milk as there's no fat in it. Rather use ordinary full fat milk but less of it. Almond milk can be like water.

I like the new Nutrition graphic on your recipes, however they don't seem to print. I've expanded the nutrition info box and am printing all pages, but it doesn't seem to work. Have tried it on several recipes and they all do the same thing. Help. Thanks.

Did this recipe used to call for feta cheese?
I used to make a meatloaf from this site also wrapped in bacon but it was with feta.
I could not find my printout which is why I was looking online.

Feta is a suggested addition in the Tips section of this recipe.

Made this recipe and it was amazing! Did not change much. Added some garlic with the onion, cause you can never have to much garlic 😋 And baked the meatloaf in a glass pan, to get crispy bacon all over. Broiled it at the end too. The sauce sounded weird. But it was amazing!!! I wish we had double the amount of sauce. It made the meal absolutely fantastic. Husband & kids loved it too.

This is absolutely my favorite! I usually make it with the sundried tomatoes and parmesan cheese that was in the tips section. I notice now that paragraph that showed alternative add-ins is no longer in the recipe. I miss having those ideas.

There is no tip section. So I'm wondering if you would use feta cheese just as you would the grated cheddar. I'm going to try it.

We haven't tried it that way, but you could certainly try a different type of cheese! Keep in mind that feta may create a different consistency than shredded cheddar.

I am new to Diet Doctor and just found this recipe. I am leaving for the market to get the meat/pork etc... and making this immediately.

In reading the comments it is clear that there was once content under the Tips heading. Now there are no "tips" or content.

Would you please put those "tips" back? TIA

Hi, Michael! The tip was regarding adding a different type of cheese, but it turned out that it didn't work so well, so it was removed.

I have never been fond of meatloaf but this recipe totally changed my mind. It was excellent! I needed more protein in my low carb diet and found you through watching Wes's Low Carb Meatloaf Battle. The only change I made was sautéing diced jalapenos with the onions for a little extra flavor. Surprisingly the jalapeno flavor was lost and the oregano was the crowning touch. YUM!

I've made this recipe several times and it always comes out perfect! Today I'm low on heavy cream so I'm going to make the bold move to sub it with full fat Greek Yogurt. Keeping my fingers crossed. Thoughts?
